Mini anchovy and Olive Pizza

These pizzas can be baked as one then cut into bite-size pieces for serving. They can be made up and frozen before cooking.

Ingredients

1 Ciabatta or Foccacia 1 clove garlic 190g jar red pesto 2x50g cans anchovy fillets 30 stoned black olives freshly grated parmesan cheese freshly ground black pepper

Method

1 Cut the ciabatta into 3 lenghtways to make three large thin slices. Lightly grill on both sides, rub with the cut clove of garlic and spread with pesto. 2 Chop the anchovy fillets and slice olives thinly, scatter over the pizzas. Finally sprinkle with parmesan cheese and pepper. 3 Bake 200C/gas 6 until topping is heated through. To serve, cut into bite-size pieces. PER SERVING 775 Kcal, fat 45.3g, saturated fat 12.6g, salt 7.4g, carbohydrate 57.1g, sugar 4.4g, fibre 3.4g
