3 thick slices white bread ½ tsp anchovy paste 200g/8oz can tuna in oil, drained 3 spring onions, chopped 1 large tomato, sliced 2-3oz/50-75g mozzarella, sliced Fresh oregano Freshly ground black pepper
Grill one side of the bread. Spread the untoasted side thinly with anchovy paste. Top with tuna chunks, spring onions, tomato and mozzarella. Snip oregano over the top and season with freshly ground black pepper. Return to grill and cook under a moderate heat until cheese has malted and started to brown. Serve at once.
