Ingredients

2 slices wholemeal bread
1 slice white bread
Butter or low fat spread
Curd cheese or low fat cheese
Grated carrot
Crushed peanuts
1 hard boiled egg, sliced
cucumber
lettuce
black pepper

Method

Thinly spread bread with butter or low fat spread. Place cheese, carrot and nuts on one wholemeal slice and top with white slice, buttered side uppermost. Layer with slices of cucumber, egg and lettuce, sprinkle with black pepper and top with second wholemeal slice. Cut in half diagonally to serve.
