These healthy wraps can be prepared in minutes and look and taste great. A perfect light lunch time snack for unexpected guests. They also make great picnic food or a wonderful accompaniment to barbecued meats.

16 small wheat tortillas 2 x 420g cans mixed beans in a spicy tomato or chilli sauce 2 tbsp soured cream 2 tbsp fresh coriander, chopped salt and freshly ground black pepper 2 large or 4 small red peppers 1 large red onion 3 tbsp olive oil fresh coriander for garnish
Drain the beans well and mix in a food processor with the soured cream until smooth. Add the coriander and season with salt and pepper. Cut each pepper into 6 pieces, remove the stems and seeds, finely slice the onion. Place pepper and onion in a grill pan and drizzle with olive oil. Place under a hot grill until the peppers are starting to char. Slice the peppers into thin shore pieces. Cut the tortillas in half and spread with the bean mixture, followed by the grilled vegetables. Roll up and place on a serving dish. Garnish each wrap with a small piece of coriander.
