Picnic Loaf

This recipe has all ingredients for a perfect summer meal. Whether you are entertaining at home or outdoor, there is no better way to spoil yourself than enjoying a thick slice of this tasty loaf.

Ingredients
1 cob loaf
butter or low fat spread
4 lettuce leaves
10 thin slices cucumber
115g/4oz sliced smoked ham
3 tbsp sliced sweet gherkins
2 tbsp sweetcorn relish
2 cooked chicken breasts sliced
2 tbsp coleslaw
½ red pepper, sliced
Method
Cut top off loaf and take out interior (use for breadcrumbs). Spread inside with butter. Line with lettuce leaves and cucumber. Fill loaf with a layer of ham, gherkins, relish, chicken and coleslaw. Finish with some red pepper slices and replace the lid. Wrap in tin foil or cling film and chill for a few hours. To serve, cut into thick wedges.
