2 muffins ˝oz/15g butter 4oz/100g onion, thinly sliced ˝ small clove garlic, crushed 1 tbsp/15ml plain flour 2˝fl. oz/65 ml milk salt and pepper 2 rashers lean bacon ˝ tsp/˝ x 5ml poppy seeds
To make the sauce, melt butter, add onion and garlic and cook until softened. Stir in flour and cook for 1 minute, take pan off the heat and add the milk. Bring to the boil and season, stirring all the time. Grill bacon until cooked and cut into pieces. Halve muffins. Divide onion mixture and top the four halves. Sprinkle with cut bacon and poppy seeds. Place on a baking tray and cook at 200C/400F/gas 6 for 15 mins. Serve warm with a green salad.
