Italian Panini

Oven roasted peppers and tomatoes and fresh basil, topped with mozzarella slices, served on a panini roll. A combination of traditional Italian flavours.

Ingredients

3 plum tomatoes, halved ½ red pepper ½ green pepper ½ yellow pepper 1tbsp olive oil salt and freshly ground black pepper 1 panini roll, halved 75g buffalo mozzarella, sliced 3-4 basil leaves, torn

Method

Preheat the oven to 200C/gas 6. Place the tomato halves and peppers in a roasting tin, drizzle with olive oil and season. Roast in the oven for 20 minutes. Warm the halved paninin roll in the oven for 4 - 5 minutes. To assemble, cut the roasted peppers into strips, combine with the roasted tomatoes and torn basil leaves and spoon over the warmed panini bread Top with mozzareall slices and season. To serve warm, place under a medium heat grill for 5 minutes. PER SERVING 526 Kcal, fat 28.8g, saturated fat 12.6g, salt 1.6g, carbohydrate 46.9g, sugar 20.1g, fibre 7.7g
