Oven roasted peppers and tomatoes and fresh basil, topped with mozzarella slices, served on a panini roll. A combination of traditional Italian flavours.
Serves 1
3 plum tomatoes, halved ½ red pepper ½ green pepper ½ yellow pepper 1tbsp olive oil salt and freshly ground black pepper 1 panini roll, halved 75g buffalo mozzarella, sliced 3-4 basil leaves, torn
Preheat the oven to 200C/gas 6. Place the tomato halves and peppers in a roasting tin, drizzle with olive oil and season. Roast in the oven for 20 minutes. Warm the halved paninin roll in the oven for 4 - 5 minutes. To assemble, cut the roasted peppers into strips, combine with the roasted tomatoes and torn basil leaves and spoon over the warmed panini bread Top with mozzareall slices and season.
