Grilled Ciabatta with Mozzarella, Red Onion and Cherry Tomatoes

Give yourself a taste of Italy with this alternative to the pizza.
Serves 4
1 Ciabatta loaf 50g/20oz Green olive tapande 1 Red Onion, peeled and sliced Oil for brushing 200g/7oz Mozzarella Cheese, sliced 8 - 10 Cherry tomatoes
Cut the Ciabatta loaf in half horizontally and toast lightly. Spread bread with the tapande. Brush the onions with oil and place them under the grill for 3 minutes until lightly browned. Neatly arranged the cheese slices on the bread and lay the onion slices on top. Scatter with halves of cherry tomatoes and place under a hot grill for around 2-3 minutes until the cheese melts and the onion chars. PER SERVING 384 Kcal, fat 15.9g, saturated fat 7.7g, carbohydrate 44.3g, sugar 4.4g, fibre 2.9g
