15cm/6" length French bread butter for spreading 1 hard boiled egg, shelled and chopped 10ml/2tsp mayonnaise salt and pepper 25g/1oz peeled prawns or smoked mackerel fillets cucumber, slices 1 tomato, sliced
Make 2 lenghtways cuts, leaving a hinge in the French bread. Thinly butter each cut. Mix together egg and mayonnaise and season to taste. Spread this in one cut. Place prawns or smoke mackerel in the other cut with cucumber and tomato slices. Variations: The same fillings can be used to make a double decker sandwich.
