Tuna and Corn Muffins

Ingredients
4 muffins
200g/7oz can tuna, drained
small can sweetcorn, drained
2 spring onions, chopped
3 tbsp fromage frais
1 tbsp chopped fresh parsley
freshly ground black pepper
85g/3oz mozzarella, sliced
Method
Toast muffins on both sides. Mix tuna with sweetcorn, onions, fromage frais, parsley and black pepper. Split muffins in half and divide tuna mixture between the 8 halves. Top with sliced mozzarella and place under a medium grill until the is softly brown. PER SERVING 340 Kcal, fat 9.4g, saturated fat 5.3g, salt 1.4g, carbohydrate 42.8g, sugar 6.9g, fibre 2g
