Serves 4
6 slices bread 25g/1oz butter or margarine 2 eggs 175ml/6fl oz milk ½ tsp mustard pepper 115g/4oz smoked ham, roughly chopped 85g/3oz Cheddar cheese, grated
Pre-heat oven to 190C/375F/gas 5. Remove crusts from the bread and spread with half the butter. Use the buttered side down to line an 18cm (7") square tin, joining the slices well to avoid any gaps. Spread the inside of the case with the remaining butter and chill for 15 mins. Beat together eggs, milk and mustard, season with pepper. Place ham and cheese in the flan case and pour over the egg mixture. Bake for about 30 mins until risen and golden brown. Serve with a tomato salad and crusty rolls.
