An usual pudding that is really tasty.
Makes 6 parcels
8 large slices bread of your choice (white, brown or wholemeal) 50g/2oz butter or margarine 3 large cooking apples, peeled, cored and sliced 25g/1oz granulated sugar Zest and juice of ½ lemon 2 eggs, separated 50g/2oz caster sugar
Cut the crusts from the bread. Melt the butter and dip both sides of the slices of bread in it. Cut each slice into 3 strips lengthwise and use it to line the base and sides of a shallow, 1 litre ovenproof dish, overlapping as they will shrink during cooking. Bake at 200°C/400°F/Gas mark 6 for 20 minutes. Meanwhile, stew the apples with the granulated sugar, lemon zest and juice. When soft, beat to a pulp. Beat in the egg yolks. Return to a gentle heat and cook for 1 minute stirring all the time. Spoon into the prepared dish. Whisk the egg whites until stiff. Fold in the castor sugar and pile on top of the apple mixture. Return the dish to the oven and bake for a further 10-15 minutes until browned. PER SERVING 322 Kcals, fat 10.9g,saturated fat 5.2g, salt 1.1g, carbohydrate 50.8g, sugar 22.1g, fibre 4.9g
