Ainsley Harriott's - The Ultimate Tuna Mayonnaise Sandwich

Ingredients
40g (1 1/2oz) butter or polyunsaturated margarine, at room temperature
8 slices white or brown bread
6 tablespoons mayonnaise
4 springs onions, finely chopped
2 tablespoons capers, rinsed
1 teaspoon Dijon mustard
1 teaspoon freshly grated horseradish (from a jar is fine)
1/2 lemon, pips removed
400g (14oz) can tuna in oil, drained
salt and freshly ground black pepper
Method
1. Lightly butter the slices of bread.
2. Place the mayonnaise in a bowl and beat in the spring onions, capers, mustard, horseradish and a squeeze of lemon juice. Season to taste and fold in the tuna.
3. Divide the tuna mayonnaise among four slices of the bread, then sandwich together with the rest of the slices of bread and cut each one in half. Arrange on plates to serve.
