A tasty snack for lunchtime or for supper. Really quick and easy to make.
Serves 4
1tbsp olive oil 2 medium red onions, peeled, halved and sliced thinly 2 cloves of garlic, crushed 8 mini Pitta breads 115g/4oz grated cheese
Heat oil and add the sliced onion with garlic and cook slowly until golden. This will take 20-30 minutes. Toast pittas on both sides. Divide onion mixture between them and top with grated cheese. Grill until cheese has just melted. Serve warm. PER SERVING 365 Kcal, fat 13.3g, saturated fat 6.8g, salt 1.3g, carbohydrate 47.7g, sugar 6.5g, fibre 3g
