Focaccia with Artichokes, Olives and Grilled Plum Tomatoes

A truly versatile bread dish, that brings the taste of the Mediterranean to your menu.
Ingredients
1 Large Foccacia
50g/2oz Sundried tomato tapande
2 Plum tomatoes, quartered and seeds removed
2tbsp Olive oil
200g/7oz tinned artichokes, drained
50g/2oz pitted black olives
50g/2oz Mozzarella cheese
1 tsp fresh oregano, finely chopped

Method
Evenly spread the Foccacia with the tapande. Brush the quartered tomato with oil and sprinkle with salt. Grill until lightly browned. Arrange the tomatoes on the Foacaccia along with the artichoke and olives. Place the mozzarella cheese in the centre. Put into a pre-heated oven 220C/425F/gas 7 for 7 - 8 minutes until heated through and lightly browned on top. Sprinkle with the oregano and serve.
