Goats Cheese and Proscuitto with Fig Jam Ciabatta

Mild and creamy goats cheese with Italian proscuitto and peppery rocket leaves served as an open Ciabatta sandwich. Makes a pefect dinner party starter or a trendy lunch.

Lunch for 1 or a starter for 2

Ingredients

½ Ciabatta
15g rocket leaves
4tsp balsamic vinegar and caramelised fig dressing
2 slices of proscuttio
100g goats cheese, cut into slices
salt and freshley ground black pepper

Method

Cut the Ciabatta in half. Divide the rocket leaves between the 2 pieces of Ciabatta and drizzle over the dressing. Top with the proscuitto then the slices of goats cheese, season with salt and freshley ground black pepper. To serve warm, grill under a medium heat for 5 minutes. Cook's tip If eaten warm serve with rocket leaves drizzled with balsamic vinegar and caramelized fig dressing.
