Chicken Satay Sandwich

Ingredients
3 tbsp crunchy peanut butter
1 tbsp mango chutney
2 tsp lemon juice
55g (2oz) dried apricots, chopped
2 cooked chicken breasts
4 large baps or 4 pitta bread
2 tbsp mayonnaise
shredded iceberg lettuce
Method
Mix the peanut butter with the mango chutney, lemon juice and chopped apricots. Cut the chicken into thick slices. Cut the baps in half and spread with the peanut mixture before filling with the chicken, mayonnaise and iceberg lettuce.
