300g/3/4lb self-raising flour 1 level tsp baking powder 100g/4oz butter or margarine 175g/7oz granulated sugar 3 level tsp ground cardamom or cinnamon 150ml/5fl oz single cream 75ml/3fl oz milk Topping 25g/1 oz flaked almonds 25g/1oz granulated sugar 2 level tsp cinnamon
Grease a 2lb loaf tin (23cm x 13cmx7) and line with breadcrumbs.
Mix the flour and baking powder together. Cut the butter or margarine into the flour and rub in with the fingertips until the mixture resembles fine breadcrumbs. Mix in the sugar and cardamom. Add the cream and stir well together until the mixture forms a stiff dough.
Spread the mixture out in the prepared tin and level the top. Sprinkle evenely the topping on the mixture.
Bake at 200C/gas 6 for approximately 1 hour. Test the cake with a metal skewer.
