Bacon and Chive Loaf

One Loaf (1lb/450g)

Ingredients

200g/7oz self-raising flour Small pinch of salt 40g/1½ oz butter or margarine 100g/4oz streaky bacon, chopped (use scissors) 15ml/1tbsp chives, chopped 1 egg, beaten 30ml/2 tbsp mayonnaise 45ml/3 tbsp milk Salt and pepper

Method

Sift together flour and salt. Rub in fat. Fry bacon lightly in its own fat for 5 mins. Stir chives and bacon into the rubbed in mixture. Mix in the remaining ingredients to form a soft dough. Turn onto a lightly floured surface and knead until smooth. Place into a greased small (1 lb) loaf tin. Bake in a moderate oven 180C/gas 4 for about 1¼ hours. Cool in tin for 10 mins before turning on to a wire rack. PER 100g 335 Kcal, fat 19.2g, saturated fat 7.5g, salt 1.6g, carbohydrate 32.1g, sugar 1.1g, fibre 1.4g
