No one believe these are healthy - they taste so delicious!
Makes 16 squares
500g ripe bananas 125g plain flour 125g wholemeal plain flour 2tsp baking powder 50 ready-to-eat stone prunes pureed with 4tbsp water 2 medium egg whites 1tbsp skimmed milk 125g chopped stoned dates 50g chocolate chips 75g unsweetened chewy dried banana chips
Pre-heat the oven to Gas Mark 4/180C. Mash bananas in a bowl. Add flours, baking powder, prune mixture, egg whites and skimmed milk and beat well. Stir in dates and chocolate chips. Pour into an 18cm (7") square lightly oiled tin and sprinkle with banana chips. Bake a gas mark 4/180C for 40 - 45 minutes until a skewer inserted into the middle of the cake comes out clean. Allow to cool before cutting into 16 squares. Cooks Tip Will keep in an airtight container for up to 5 days or a freezer for up to 6 months.
