Yorkshire Parkin

Too good just to make for Bon Fire Night. This cake is best left for 1 - 2 weeks before you eat it as it becomes stickier the longer you can manage to keep it.

Ingredients

350g/12oz butter
6 x 15 ml/6tbsp black treacle
200g/7oz soft light brown sugar
200ml/7fl oz milk
400g plain flour
pinch salt
20ml/4tsp ground ginger
10ml/2tsp baking powder
450g/1lb coarse oatmeal
50g crystallised ginger, finely chopped ( optional)

Method

Preheat the oven to 170C/gas 3. Grease tin. Melt butter, treacle, sugar and milk in a pan until sugar is dissolved. Sieve flour, salt, ginger and baking powder and add oatmeal. Add crystallised ginger now if required.Mix in liquid thoroughly. Pour into a 36cm x 25cm x 5cm lightly greased baking tin or a rectangular oven proof dish and bake in a preheated oven until the centre is firm to touch. Remove from oven cool in the tin for 30 minutes then cut into pieces and leave to cool completely on a rack. PER SERVING 346 Kcal, fat 16.8g, saturated fat 9.3g, salt 0.5g, carbohydrate 46.7g, sugar 14.3g, fibre 2.1g
