Soda bread is delicious eaten on the day it is made or toasted or warmed in the oven or microwave on the subsequent few days. It is the perfect accompaniment to a cooked breakfast, makes great sandwiches and is also great served as an accompaniment to a stew or casserole.

Ingredients

400g/1lb plain white flour (or a mixture of white and wholemeal flour)
1 tsps salt
2 tsps bicarbonate of soda
4 tsps cream of tartar
25g/1oz fat
250ml/½pint milk (approx.)

Method

Sift the flour, salt, soda and cream of tartar into a bowl. Rub in the fat and add enough milk to make a soft dough. Turn the mixture onto a floured board and knead lightly for one minute. Shape into a round and place on a greased baking sheet. Mark with a cross, cutting almost to the base of the dough. Bake at 220C/425F/gas 7 for 40-50 mins until well risen, lightly browned and firm underneath. Note The bicarbonate of soda and cream of tartar can be replaced by 4tsps of baking powder. If soured milk or buttermilk is used instead of fresh milk reduce the cream of tartar to 2tsp PER 100g 241 Kcal, fat 4.2g, saturated fat 2.3g, salt 1.8g, carbohydrate 45.5g, sugar 2.5g, fibre 1.7g
