Honey Drop Scones

Makes 15 - 20 scones
Ingredients
225g/8oz self raising flour
2.5ml/½ tsp mixed spice
55g/2oz caster sugar
15ml/1 tbsp clear honey
1 egg beaten
300ml/½pint milk
oil for cooking
Method
Place flour, mixed spice and sugar in bowl making a well in the centre. Mix honey and beaten egg together and pour into centre of flour. Gradually add milk, beating well until smooth. Use oil to lightly grease a heavy based frying pan or a griddle, and heat until moderately hot. Drop 15ml/1tbsp of mixture into pan and cook until bubbles appear on surface and underneath is golden brown. Turn over, cook the other side for a further 1-2 minutes. Place between a tea towel or kitchen paper and keep warm. Repeat until all batter is used. Serve warm spread with butter or cream cheese and more honey if wished.
