Almond Paste

Ingredients

For top and sides of cake
150g icing sugar
150g caster sugar
300g ground almonds
4 egg yolks
3 tbsp lemon juice
3-4 drops almond essence

Method

Sift sugars and ground almonds together in a large mixing bowl. Mix egg yolks, lemon juice and almond essence. Gradually add to the dry ingredients and mix to a soft paste. Knead lightly until smooth PER SERVING 455 Kcal, fat 26.4g, saturated fat 2.7g, salt 0.03g, carbohydrate 46.9g, sugar 45.5g, fibre 3.1g
