Coconut and Pineapple Oat Biscuits

These biscuits are great for serving with ice cream to make a quick dessert or drizzle with a little melted chocolate to make a luxurious treat.

Servings

Makes 18 biscuits

Ingredients

50g soft margarine or butter
50g clear honey
1 egg white
100g drained crushed pineapple in own juice
rind of 1 lemon
50g unsweetened shredded coconut
100g plain flour
150g rolled oats

Method

Pre-heat oven to Gas Mark 4/180. Lightly oil a baking sheet. Cream together margarine and honey until mixture is smooth and pale in colour. Add remaining ingredients and mix thoroughly. Place teaspoons of mixture onto a baking sheet, pressing each down with fork. Bake for 10 minutes at Gas Mark 4/180C. Transfer to a wire rack to cool.
