Best Ever Apple Pie

Like the title says this really is the best apple pie you could ever make or eat. It is east to make and taste delicious.

Serves 6 - 8

Ingredients

500g block pack of fresh ready-to-use shortcrust pastry 200g ready-made Victoria sponge or madeira cake 500g Bramley apples (about 3 large apples) peeled and cored and sliced 100g caster sugar 2tsp cinnamon 1tsp ground nutmeg 40g butter 100ml double cream a little milk to glaze pastry

Method

Preheat the oven to gas 6/200C/400F. Cut the pastry in half and roll out one peice to cover base of a 23cm (9") pie dish. Cut very thin slices of cake and use them to make a single layer in the base. Put perpared appels into bowl. Sprinkle with cast sugar, ground cinnamon and ground nutmeg, mix well. Transfer to pie dish and dot with butter. Roll out remaining pastry, gently place the pie dish onto the pastry and use this as a guied to cut a circle for the lid. Wet edge of pie with a little water; place on lid and press edges firmly to seal. Use the scraps to make 3 - 4 pastry leaves to decorate the top - wet these with a little water and press in place. Brush with a little milk to glaze. Cut a slit in centre of pie and place in the oven at Gas Mark 6/200C for about 1 hour or until top is golden and apples are cooked. Cooks Tip For a real American apple pie, after cooking turn off the oven, remove pie and pour double cream into slit. Return pie to oven for 20 minutes or until oven cools - then serve immediately. If you buy 284ml carton of cream, there will be plenty left over to serve chilled witht he rest of the dessert.
