2 teacakes 30ml/2 tbsp lemon curd 2 eggs (size 3) beaten 225ml/½ milk ½ tbsp caster sugar lemon rind to decorate
Cut teacakes in half, spread with lemon curd and reassemble. Cut each teacake into six sections. Place in individual ovenproof dishes. Beat eggs with milk and caster sugar and strain over teacakes. Bake at 180C/350F/gas 4 for about 20 mins or until risen and set. Decorate with lemon rind before serving.
