Stuffed Butternut Squash

Ingredients
2 butternut squash
200g/7oz raw minced beef
1 onion, finely chopped
15ml/1 tbsp oil for frying
85g/3oz breadcrumbs
Small can baked beans
50g/1ľoz cheddar cheese, grated
Salt and pepper
Method
Halve the squash, spoon out seeds and place on baking tray. Bake in hot oven 200C/gas 6 for 20 minutes. Meanwhile fry the meat and onions together until lightly browned. Stir the breadcrumbs, beans and seasonings into the meat. Remove squash from oven and fill with meat mixture. Sprinkle with cheese and return to oven.
