This is a very simple recipe to prepare - great for evening family meals or a special meal with friends when you don't have too much time to prepare it.
Serves 4
1 tbsp vegetable oil 1 large onion, chopped 700g/1lb 9oz casserole pork, diced 300g/10½oz tin condensed mushroom soup 150ml/¼pt strong dry cider 3 eating apples, cut into quarters, cored and then sliced thickly salt and pepper 5 thick slices from a crusty loaf eg bloomer 25g/1oz butter or margarine 1tsp wholegrain mustard
Heat the oil and gently fry onion until soft, add the pork and brown quickly. Stir the soup with cider and the sliced apples, season with salt and pepper. Simmer for about 1 hour until pork is tender. Place in a shallow dish. Cut the slices of bread in half, spread with butter and mustard. Use to top the pork and place under a warm grill or in a hot oven until well browned. Serve with fresh vegetables and crusty rolls.
