Serves 4
½oz/15g butter 1 small onion, finely chopped 5 oz/150g fresh white or wholemeal breadcrumbs 2 tablespoonfuls freshly chopped parsley 2 oz/50g Cheddar cheese, grated Black pepper 4 haddock or cod steaks 3 tablespoonfuls tomato relish or tomato ketchup Garnish with Lemon wedges.
Pre-heat oven to 375°F/190°C/Gas Mark 5. Melt butter in a saucepan. add the onion and cook gently until soft. Remove from the heat and stir in the breadcrumbs, parsley, cheese and seasoning. Arrange fish steaks in a shallow ovenproof dish. Spread steaks with relish and pile breadcrumb mixture on top. Bake in preheated oven for 20 to 30 minutes or until cooked.
