The crispness of the bread topping perfectly complements the succulent cod fillet in this recipe.

75g/3oz Bread/bread roll cut into 2 cm dice 1tsp Parsley, chopped 1 tsp Dill, chopped ¼Clove of garlic, crushed 1 Plum tomato, de-seeded and flesh chopped 1 Egg, beaten 25g/1oz Butter, melted 180g/6oz Cod fillet Salt and black pepper
Place the bread, parsley, dill, garlic and tomato in a bowl, season with salt and black pepper. Add the egg and butter and mix in well. Brush the cod fillet with melted butter, season with salt and pepper. Arrange a portion of the bread mixture on top and secure it in place. Place into a pre-heated oven 200C/400F/gas 6 and bake for around 15 minutes or until the fish is cooked. Serve with vegetables or salad and crusty bread.
