Serves 4
4 muffins tomato puree 2 tomatoes small tin of sweetcorn, drained 75g/3oz cheese, grated 3 rashers lean bacon
Toast muffins on both sides, split in half and spread thinly with some tomato puree. Top with thinly sliced tomatoes and sweetcorn. Place cheese on top of sweetcorn, followed by bacon cut into strips. Sprinkle with herbs and grill until the cheese is bubbling and starting to brown. PER SERVING 363 Kcal, fat 12.5g, saturated fat 4.7g, salt 1.8g, carbohydrate 47.5g, sugar 8.5g, fibre 2.6g
