8 medium sized courgettes 225g/8oz lean bacon, chopped 1 red pepper, chopped 1 red onion, chopped 280g/10oz wholemeal breadcrumbs 100g/4oz pinenuts 2 tbsp chopped fresh parsley 1 egg, beaten freshly ground black pepper
Cut the courgettes in half lengthwise and scoop out some of the flesh using a teaspoon. Fry bacon, red pepper and red onion until cooked and add to the breadcrumbs, nuts and other ingredients. Mix well and pile into the courgette halves. Bake at 190C/375F/gas 5 for about 40 mins or until the courgettes are tender. Serve with a tomato sauce and fresh crusty bread.
