Pork Stir Fry with Sesame Toast

Ingredients

2 tsp sunflower oil
1"(2.5cm) piece ginger root, peeled and finely chopped
1 clove garlic crushed
12oz/375g thinly sliced pork escalopes or fillet
1 small yellow/orange pepper, de-seeded and thinly sliced
8oz/250g courgette, cut into 2.5cm (1inch) batons
4oz/110g) mange tout
8 spring onions, sliced
2 tsp sesame oil
2 tbsp light soya sauce
juice of 2 oranges
4 tsp cornflour
4 tbsp water
2 tbsp sherry
4 slices white bread
1 tbsp olive oil
2 tsp sesame seeds

Method

Heat the oil. Add ginger and garlic, cook for 1 minute. pepper, brown pork. Stir in pork and pepper and stir until the portk is golden brown. Add courgette, mange tout, spring onion, sesame oil, soya sauce and orange juice. Blend cornflour with water and sherry and add to pan. Cook for 2-3 minutes. Meanwhile, remove crusts from bread and cut into triangles. Lay on baking tray, drizzle with olive oil and sprinkle with sesame seeds. Bake in oven at 200C/400F/gas 6 for 10 minutes or until crisp and golden. Garnish with sesame toast.
