1 medium onion, chopped 200g/8oz minced beef 1 tsp/1x5ml flour 1 tsp/1x5ml tomato purée 1 tsp/5ml chilli powder ¼pt/125ml beef stock 1 tomato, roughly chopped 1 small tin baked beans black pepper 1 thick slice bread, cut into cubes grated cheese
Soften onion in a little oil, add mince and cook until browned. Stir in flour and chilli powder and cook for one minute. Add tomato purée, stock, chopped tomato, baked beans and seasoning. Bring to the boil and simmer for about 15 minutes. Divide chilli mixture between two small ovenproof dishes, top with bread cubes and sprinkle with grated cheese. Place under a moderate grill until cheese has melted and bread is browned. PER SERVING 513 Kcal, fat 26.4g, saturated fat 12.2g, salt 3.5g, carbohydrate 38.1g, sugar 13.2g, fibre 6.9g
