Serves 1
175g/6oz cod or haddock fillet 1 sliced tomato 1oz Fresh Breadcrumbs ½oz half fat hard cheese ½ small onion, finely chopped chopped fresh parsley
Top the fillet with the sliced tomato and a mixture of the breadcrumbs, cheese, onion and parsley. Bake at 190°C/375°F/Gas Mark 5 for 20-30 minutes. Serve with vegetables and boiled potatoes. PER SERVING 296 Kcals, fat 4.2g, saturated fat 1.6g, salt 1.1g, carbohydrate 27g, sugar 5.1g, fibre 1.9g
