Serves 4
1 avocado 85g/3oz smoked ham 2 tomatoes 12 black olives 30ml/2tbsp vinaigrette ½ Ciabatta loaf 30m/2 tbsp tomato purée 15ml/1 tbsp olive oil
Peel, stone and dice avocado. Dice ham and tomatoes and mix all together with the olives and vinaigrette. Cut ciabatta in half. Spread cut sides with tomato puree and drizzle with olive oil. Grill for 3-4 minutes each side. Divide avocado mixture between toasts, piling onto each. Serve at once.
