Serves 4
2 Ciabatta loaves clove of garlic 2tbsp pesto sauce 350g/12oz mozzarella cheese one jar of "peperonata" or 'antipasto red and yellow peppers' olive oil
Cut ciabatta loaves in half lengthways and rub cut surfaces with a cut clove of garlic. Spread pesto sauce on the bases and top with mozzarella cheese cut into slices and the "peperonata" or 'antipasto red and yellow peppers'. Season with black pepper and lightly drizzle with olive oil. Replace the tops of the loaves, wrap in foil and bake at 200C/400F/Gas 6 for about 25 mins. Serve cut into thick slices with a tomato salad for lunch or make half the recipe and cut into thin slices as an accompaniment to pasta dishes.
