Cipollata Soup with Sliced Bread

Cipollata is Italian for onions! Why not be more adventourus and serve this soup with a truly Italian taste.

Ingredients
3tbsp Olive oil
450g/1lb Onions, skinned and finely sliced
1ltr/1 3/4pt Chicken stock
400g/14oz Tomatoes, chopped
Salt and black pepper
4 slices of Ciabatta bread, toasted
1 Garlic clove, skinned and halved
2 tsp fresh Basil
2 tbsp Parmesan cheese, grated
Method
Heat the oil in a large pan. Add the onions and cover, stirring frequently to prevent them burning. Cook over a low heat until the onions are soft and lightly browned. Drain away excess fat, pour in the chicken stock and add the tomatoes. Season with salt and black pepper. Cover and cook gently for 30 minutes. To serve, rub the toasted bread with garlic and place one slice of bread in each bowl. Just before serving, stir in the basil and grated parmesan. Pour the soup over the bread and serve immediately.
