Serves 4
225g/8oz lean minced beef 1 small onion, finely chopped half green pepper, finely chopped 225g/8oz can chopped tomatoes 2 tsp tomato puree half tsp chopped fresh oregano Salt and freshly ground block pepper 2 x l5cm(6") long pieces French style stick - white or brown Grated Parmesan cheese
Brown meat with the onion and pepper. Add the tomatoes, tomato puree, oregano, salt and pepper. Simmer for 20 minutes. Slice pieces of French bread in half horizontally. Scoop out a little bread to make 'boats'. Crumble pieces of the bread into meat mixture. Place 'boats' on a baking tray, divide meat filling between them and sprinkle with Parmesan. Bake at 200C/400F/gas 6 for 10-15 minutes. PER SERVING 338 Kcal, fat 11.2g, saturated fat 5.5g, salt 1.4g, carbohydrate 37.6g, sugar 5.1g, fibre 2.4g
