Tomato and Goats Cheese Bruschetta

This is great for a light lunch or for supper with friends. Pesto or mozzarella cheese could be substituted for the goat's cheese.

Ingredients

8 thick slices cut from a part baked ciabatta loaf 2 tbsp olive oil 140g/5oz soft goat's cheese 1 small pack of cherry tomatoes fresh basil leaves salt and freshly ground black pepper

Method

Preheat oven to 190C gas mark 5. Arrange slices of bread on a baking sheet and drizzle with oil. Bake in preheated oven until golden and crisp on the outside, allow to cool. Spread with goat's cheese and top with halved cherry tomatoes and fresh basil. Sprinkle with salt and black pepper and serve. PER SERVING 175 Kcal, fat 7.2g, saturated fat 2.5g, salt 0.8g, carbohydrate 22.2g, sugar 2.5g, fibre 1.3g
