Serves 3
25g/1oz butter 225g/8oz onion, skinned and thinly sliced 1 small clove garlic, crushed 2tbsp plain flour ¼pt/150ml milk Salt and pepper 55g/2oz smoked ham, diced 2 large baps or 3 muffins or 6 crumpets 1 tsp poppy seeds
To make the sauce, melt butter, add onion and garlic and cook until softened. Stir in flour and cook for 1 minute. Add milk, bring to the boil and season. Stir in ham. Halve baps horizontally. Divide onion mixture and spread over baps. Sprinkle with poppy seeds. Place on a baking tray and cook 200C/400F/gas 6 for 15 minutes, until bread is crisp and onion golden.
