Grilled Ciabatta with Mozzarella, Red Onion and Cherry Tomatoes

Ingredients
1 Ciabatta loaf
50g/20oz Green olive tapande
1 Red Onion, peeled and sliced
Oil for brushing
200g/7oz Mozzarella Cheese, sliced
8 - 10 Cherry tomatoes
Method
Cut the Ciabatta loaf in half horizontally and toast lightly. Spread bread with the tapande. Brush the onions with oil and place them under the grill for 3 minutes until lightly browned. Neatly arranged the cheese slices on the bread and lay the onion slices on top. Scatter with halves of cherry tomatoes and place under a hot grill for around 2-3 minutes until the cheese melts and the onion chars.
