Caramelised red onion and thyme marmalade, topped with goats cheese. Served on walnut bread.
Serves lunch for 1 or a starter for 2
1 red onion, sliced 1tbsp olive oil 1 clove garlic, crushed 4tbsp balsamic vinegar 1tsp chopped fresh thyme 100g goats cheese, cut into slices 2 slices walnut bread Salt and freshly ground black pepper
Heat the olive oil in a medium frying pan and cook the red onions over a medium to low heat for 5 minutes. Add the crushed garlic and continue to cook for a further 2-3 minutes until the onions are softened. Add the balsamic vinegar and cook over a medium to high heat for 4-5 minutes until the balsamic vinegar is reduced. Divide the red onion marmalade between the slices of walnut bread. Top with the slices of goats cheese and season with salt and freshly ground black pepper. Grill under a medium heat for 5 minutes. Cook's notes Would make a great dinner party starter, served with rocket leaves drizzled with balsamic vinegar and olive oil.
