1 tbsp Oil 1 Small onion, chopped 175g/6oz Minced beef 2 Garlic cloves, chopped 150ml/¼pt Beef stock ½ tbsp Flour 200g/7oz Chopped tomatoes ½ tbsp Jalapeno peppers, finely chopped 4 Flour tortillas Soured cream for serving 1 Tomato, sliced Tomato salsa for serving Salt and black pepper
Heat the oil in a large frying pan. Add the onion and fry gently until softened. Add the beef, garlic and beef stock and cook, stirring until the meat breaks up as it seals. Stir in the flour, and then add the chopped tomatoes, peppers and season with salt and pepper. Heath the Tortillas in a medium-hot oven. Spread a spoonful of the meat mixture over each Tortilla. Top each Tortilla with some soured cream and tomato slices. Roll up and eat immediately. Serve with tomato salsa.
