Oriental Style Duck in Pitta with Hoi- Sin Flavoured Mayonnaise

A great starter or lunchtime meal to help celebrate the Chinese New Year in style.
Serves 1
1 Duck breast, skinned 3 Spring onions 50g/2oz Cucumber, chopped 25g/1oz Red pepper, sliced 25g/1oz Green pepper, sliced 50g/2oz Mayonnaise 2tsp Hoi-sin sauce 1 Pitta bread Leafy salad, radish and onions for the garnish Salt and black pepper
Place the duck on an oven tray, season with salt and black pepper and cook in a pre-heated oven (220C/425F/gas 7) for 20 minutes. Allow to cool. Slice duck breast thinly and place in a bowl. Add the vegetables and mix in the mayonnaise and hoi-sin sauce. Heat the Pitta bread in the oven for a couple of minutes until it has puffed up. Split it in half to make a pocket for the filling and place the filling inside. PER SERVING 764 Kcal, fat 49.5g, saturated fat 8.6g, salt 1.8g, carbohydrate 47.7g, sugar 8.3g, fibre 3.4g
