What is the Chorleywood Bread Making Process?

Answer:

Invented in 1961 by the British Baking Industries Research Association at Chorleywood, the Chorleywood Bread Making Process much reduces the time required in the baking process. In place of traditional fermentation, dough is subjected to a few minutes intensive mixing which produces the required elastic dough much more quickly. The process is aided by the addition of 'improvers' - mainly vitamin C.
