Answer:

Flour treatment agents are used to help the manageability of dough during baking. Vitamin C (ascorbic acid) helps the dough become more manageable and gives a helping hand to give your bread good volume.

Most flour provided in the UK does not contain flour treatment agents, which are used to help the manageability of dough during baking. The most common is vitamin C (ascorbic acid).  Potassium bromate is used in some countries but is not permitted in the UK.
